Instructions
- Cream 2tbsp butter and 1 cup sugar
- Grind together 1 whole orange (rind and all) and 1 cup raisins and add to first mix. Mix well.
- Sift 2 c flour, 1 tsp baking soda, ½ tsp salt
- Add alternating with 1 cup buttermilk (or sour) to creamed mix and orange mix, beginning and ending with dry.
- Pour in loaf pan or mold fitted with wax paper.
- Bake in 350° oven 1 hour, give or take.
- While still hot, pour over it ¼ c brown sugar mixed with ½ cup orange juice. When this is absorbed, turn on cake rack and remove paper.
- Cover top with confectioners sugar and serve with gream and garnish with orange slice.
Notes
Alternative garnish: Brandy sauce
In upper part of double boiler, place ½ lb (1 cup) butter, 1 lb dark brown sugar, juice and grated rinds of 2 lemons, ½ cup brandy, 2 whole eggs. Beat with beater over double boiler about 5 minutes or until thick. Serve hot with cake (on other side)
