Caramel Frosting
Ingredients
- 2 cups light brown sugar
- 1 cup white sugar
- ⅔ cups hot water
- 5 tbsp unsalted butter
- 1 pound confectioners sugar
- ¼ cup freshly made coffee
Instructions
- Mix 1 cup brown sugar with the white sugar in a skillet.
- Heat, stirring constantly, to liquefy.
- Slowly add half the hot water.
- Remove to small saucepan, add remaining brown sugar and hot water. Stir to dissolve. Boil to 220°
- While sugar is cooking, cream butter and confectioners sugar and coffee in mixing bowl.
- Pour ??? sugar into the butter mixture
- Refrigerate for 2 hours or until thick enough to spread
- Stir occasionally to keep icing smooth and spreadable
- If necessary, add a little bit of butter or water to maintain spreading consistency
Notes
Makes enough for 2 layer cake. Do not stop process or it will harden and can't be beaten.
